Description Of Pomegranate Juice Processing  

  1. The pomegranate processing capacity is from 20TPD to 1500TPD. The end products are pomegranate concentrated juice, NFC clear juice and pomegranate wine. In recent years, pomegranate by-products processing like peels for animal food and seeds for oil extracting is more and more popular.
  2. Pomegranate juice contains a variety of amino acids and trace elements, which can help digestion, fight gastric ulcers, soften blood vessels, lower blood fat and blood sugar, and lower cholesterol. It can prevent coronary heart disease, heart disease and high blood pressure, and can achieve the effects of invigorating the stomach, enhancing appetite, and prolonging life. Red pomegranate is rich in minerals and has two major antioxidant components-red pomegranate polyphenols and anthocyanins. It also contains linoleic acid, vitamin C, B6, E and folic acid. The calcium, magnesium, zinc and other mineral extracts contained in pomegranate can quickly replenish the skin’s moisture loss and make the skin brighter and softer.
  3. We adopt to belt press or vacuum pneumatic press for pomegranate juice extraction. The press can gently obtain the juice from the juice pulp. The juice yield rate is 50%-60%.
  4. The pomegranate juice processing line is full automatic and controlled by PLC. The equipment configuration is fully flexible according to clients’ requirements.
  5. All equipment is made of SUS304 material, which can guarantee the hygiene requirement of food and beverage field.
  6. The whole line is equipped with CIP cleaning system, After finished production, use CIP system to clean tanks and pipes can not only enhance the efficiency of the production, but also can ensure hygiene conditions.
  7. The pomegranate processing plant includes pomegranates washing and sorting machine, pomegranate peeling and deseeding machine, pomegranate juice extracting machine, pomegranate juice filtration machine, pomegranate juice sterilizer and filling machine.
  8. The end products of the pomegranate processing have concentrated pomegranate juice, NFC pomegranate juice, pomegranate wine and pomegranate oil.

End Products  

—Concentrated pomegranate juice: from 14 Brix to 65 Brix and PH value is 2.4-3.8, filled into aseptic bags in drums, and stock into 0-5℃, the shelf life is 3 years from manufacturing.

—NFC clear pomegranate juice: 14 Brix, PH value is 2.5-3.8, filled into glass bottles or PET bottles, cartons or aseptic bags. Shelf life is 7 from 21 days to 12 months according to different sterilizing process and packing containers.

—NFC cloudy pomegranate juice: filled into bottles or aseptic cartons or tin cans.

—Reconstituted pomegranate juice/nectar: filled into bottles or tin cans or pouches. Shelf life is 12 months stock in ambient temperature.

—Pomegranate wine: Fresh pomegranate after juice extracting and filtration, through alcohol fermentation, blending, sterilizing and filling into bottles.

Pomegranate molasses:  Pomegranate molasses is a thick, dark syrup made from pomegranate juice, sugar, and sometimes lemon juice or other flavorings. It’s a common ingredient in Middle Eastern and Mediterranean cuisine, adding a unique sweet-tart flavor to dishes. It uses fresh pomegranate juice, sugar and lemon juice as raw materials, then cook the mixed molasses to the thick and high viscosity products and then fill into the glass jars.

NFC/Concentrated pomegranate juice processing flowchart

Fresh pomegranate after harvest from farm, use air bubbling washing and brush washing machine to clean the fruits, then sort the bad fruits from raw fruits manually on sorting conveyor. Then use the pomegranate deshelling machine to remove the seeds and peels, which can keep pomegranate fragments and membrane with maximum degree. After deshelling, we get the pomegranate pulp with arils, then we can use the belt press or vacuum press to extract pomegranate juice. At this process, we obtain the cloudy pomegranate juice. If you want to get clear pomegranate juice, there are 3 more processes to be done. First, the turbid/cloudy juice needs to be enzymatically hydrolyzed through an enzymatic hydrolysis tank, the purpose of this step is to enhance juice yield rate in the following clarify and filter process. Then we use a plate frame filter to do the primary filtration, after that, the juice will be through  ultra-filtration system to do the second clarification, then we can get the clear pomegranate juice. The clear juice can be pasteurized and filled into small bottles or cartons to make into NFC clear juice or concentrated by the falling film evaporator to get the concentrated juice, then filled into aseptic bag in drums.

The reconstituted pomegranate juice processing line uses concentrated pomegranate juice as raw material, add RO water to dilute and restore the juice. In order to extend the shelf life of juice, we usually add citric acid and other additives during the dilution process, then the juice will be pasteurized and filled into small bottles or tin cans for consumption.

Pomegranate deshelling machine 

The pomegranate deshelling machine uses a double-roll crusher to crush the pomegranate skins through a high-speed rotating fruiting device. The pomegranate arils fall through the screen holes, the pomegranate skins and peels are discharged from the tail of the equipment. The purpose is to separate pomegranate arils from shells, the machine is designed for appropriate deshelling. Juice is not contaminated with tannic elements thus damage its quality.

Pomegranate juice extractor 

Three types of juice extractors are mainly used for extracting juice from deshelled pomegranates:

The first is the vacuum membrane press, which can extract the juice under vacuum conditions to avoid juice oxidation during extraction. And juice quality, juice yield rate will be also much higher than belt press.

The second is the belt press machine, after the pomegranates are deshelled,  feed the arils into the belt press machine to press the juice from the pulp, when we are using the belt press machine to extract juice, the seeds in the pomegranate arils are also crushed and mixed with juice.

The third is the screw press machine, this type of juice extractor is suitable for extracting juice in a small capacity(less than 5 tons per hour), with this method, the seeds in pomegranates will be screened out from juice by the sieve screen.

Pomegranate juice enzymatic hydrolysis system and Ultra-high filtration system

Enzymolysis tank is also called enzymolysis reactor, it has function of heating, cooling, insulation and stirring. The tank body is designed with material inlet and outlet, RO water ports, sampling ports and other process ports, which can provide conditions for the enzymatic hydrolysis process. After the enzymatic hydrolysis is completed, the jacket can be opened to pass through the steam to achieve the enzyme inactivation function. The enzymolysis tank can be designed with an automatic control system, including feeding, steam heating system, circulating cooling system, stirring system, pH adjustment system, feeding system, cleaning system, discharging, control Temperature and other process control, reduce labor intensity, make the enzymolysis process fully automatic control.

The ultra-high filtration system is specially designed for clear juice production. It uses ultra-filtration membrane to filter all the big particles in juice to obtain clear juice. Raw pomegranate juice has a very high load of particles and organisms, even after bulk filtration, the particles and organisms that may adversely affect the quality and safety of clear juice drinks. Filters are used for removing sediment, clarifying the juice, reducing or removing spoilage organisms, protecting product while it is in tank storage.

Pomegranate juice evaporator 

We use falling film evaporator to make concentrated pomegranate juice, which is bright dark red acidic tang with sweetness and no off-flavors. After concentration, the total dissolving solids is 4 times higher than single-strength juice. The evaporation capacity is from 500L/H-50000L/H, during evaporation, using mutli-effect evaporators can save much water, steam and other energy. The evaporation temperature can be very low to keep the color and flavor of the end product’s juice.

Pomegranate juice sterilizer 

For concentrated pomegranate juice, we use tubular sterilizer, the sterilization process is 90℃~110℃ hold for 30-60S, then cool to 35℃~55℃for filling; For NFC juice, we use plate or tubular pasteurizer, heating pomegranate juice to 90℃ and holding for 5-15S, then cooled to 30℃ for aseptic filling or 3-5℃cold filling.

The sterilized concentrated pomegranate juice will be filled into the aseptic bag in drums, and the NFC juice, and wine can be filled into bottles, aseptic cartons or tin cans for consumption.
